What separates one survival server from the next
Almost all of them run the same base game, so the differences are in the rules around it. Look for how land claiming works, whether the world resets, how big the border is, and whether death drops your inventory. A server with grief protection and no scheduled reset is a very different commitment from a seasonal world that wipes every few months.
Claiming land before you build
Most public survival servers run a claim plugin, usually GriefPrevention or a variant, where you earn claim blocks by playing and mark out your area with a golden shovel. Build inside the claim and nobody else can break a block or open a chest. Build outside it and you are relying on nobody finding you.
How do I join a server from this list?

By default yes, dying drops your inventory where you fell and you have a few minutes to run back for it. Some servers turn on keep inventory, some sell a grave or a totem in the store, and some deliberately leave the vanilla behaviour alone because losing gear is what gives caving and combat any weight.
